Ingredients

4 servings
  1. 2 largecucumbers
  2. 1 largeripe tomato
  3. 4 tbspgood olive oil
  4. 3 tbspwhite wine vinegar
  5. 1 tbspsugar
  6. 1/4 tspsalt
  7. 1/4 tspdried basil
  8. 1 pinchpepper
  9. 1fresh ground pepper to taste
  10. 1/4 cupshredded mozzarella cheese

Cooking Instructions

    Peel and chop cucumbers. I half them lengthwise, half them again lengthwise and then chop into big bite size pieces. Dice tomatoes. Lightly toss both in a medium bowl.

    In a small bowl - mix together oil, vinegar, sugar, basil, salt and pepper.

    Pour oil mixture over cucumbers and tomatoes. Gently mix. Refrigerate covered for a few hours for flavors to blend.

    Serve salad with freshly ground pepper and sprinkle a bit of mozzarella cheese on top (however much you prefer - I use about a tablespoon on each serving) Enjoy : )
