This cucumber salad with an Asian “zing” is great any time of year...even when it’s a chilly rainy day!

Ingredients

  1. 1lg cucumber thinly sliced (approx 4 cups)
  2. 1/2red bell pepper (seeded and thinly sliced)
  3. 1/4small red onion thinly sliced
  4. 1/4 cuprice vinegar
  5. 2 tbshoney
  6. 2 tspsesame oil
  7. 1 tspsesame seeds (optional)
  8. Salt to taste (approx 1 tsp)

Cooking Instructions

  1. 1

    Slice veggies as instructed above and place in large mixing bowl. Add other ingredients and toss.

    Place in air tight container and refrigerate for about an hour before serving. ENJOY!!
