When I was craving squid, I wanted to try a recipe that didn't call for too many ingredients. I came upon this dish by Giada De Laurentiis on her show Everyday Italian. It looked super tasty. So I made it and now it's a staple in my collection of recipes! My family loves it!!!

Calamari Stew with Garlic Toast

Ingredients

  1. For the Calamari Stew
  2. 2 tbspolive oil
  3. 2 clovegarlic, cut in 1/2
  4. 3/4 cupwhite wine
  5. 1 tspfresh thyme, chopped
  6. 1/2 tspred pepper flakes
  7. 1/2 tspsalt
  8. 1/2 tspground black pepper
  9. 2 lbCalamari (Squid) cleaned and ink removed, bodies thinly sliced and tentacles whole
  10. 1 3/4 cupClasico Tomato and Basil Sauce, but you can substitute with tomato sauce
  11. For the Garlic Toast
  12. 1 loafbaguette, sliced into 12 pieces
  13. 2 tbspolive oil, for drizzling
  14. 2 clovegarlic, whole

Cooking Instructions

    For the Calamari Stew: Warm the olive oil on medium heat in a medium pot.

    Add the garlic, and let cook until fragrant, about 2 minutes.

    Remove the garlic from the oil and set aside.

    Add the tomato sauce, white wine, thyme, red pepper flakes, salt and pepper into the pot of olive oil.

    Bring the mixture to a simmer.

    Add the calamari and sautéed garlic into the pot and stir to combine.

  7. 7

    Continue to cook until mixture comes back to a simmer, approximately 2 more minutes.

    Serve immediately with the garlic toasts.

    For the Garlic Toasts: Preheat the oven to 350°F. Meanwhile, drizzle the bread slices with olive oil. Use a brush to slather the oil evenly onto the bread. Arrange the bread slices on a long sheet of aluminum foil. Carefully, place the aluminum foil with the bread slices into the preheated oven on the middle rack. Toast until the bread is crisp and turning golden brown, about 8 to 10 minutes. Remove from the oven and rub the top of the toasts with whole garlic cloves. Serve immediately with the Calamari Stew.
