Carrot ginger soup

Ingredients

  1. 1/4 cupbutter or coconut oil
  2. 1 cuponion, chopped
  3. 3 cupcarrots (peeled and chopped)
  4. 1large potato (peeled and cubed) or 1 cup cooked lentils
  5. 1celery
  6. 3 cupchicken broth or vegetable broth
  7. 1 tspground or fresh ginger
  8. 1/2 cupmilk or coconut milk
  9. 1 tspcurry powder
  10. 1/2 tspsalt
  11. 1black pepper (to taste)
  12. ttsp thyme
  13. 2 cupbutternut squash (optional)

Cooking Instructions

    Heat butter over low/medium heat, saute onions until translucent

  2. 2

    Add carrots, potato, celery, broth and ginger. Cover and bring to boil. Reduce to low heat, simmer for approx 30 min or until vegetables tender. Stir occasionally.

    Blend until smooth. Stir in milk, curry, salt and pepper. Simmer over low heat until heated through and reaches desires consistency (approx 10 min)
