Cooking Instructions
- 1
If using mushrooms saute these first with the butter on medium heat. When water from mushrooms are evaporated, remove from heat and set aside.
- 2
Still on medium heat, add onions and garlic and saute until the onions are almost transparent. Add the chicken and black pepper. Cook until the chicken is lightly browned.
- 3
While chicken is cooking, bring a medium pot of lightly salted water to boil, add the noodles. When noodles are cooked, drain.
- 4
Add the rest of the vegetables to the pan, including the mushrooms. Cook until the vegetables are tender crisp, or done to your liking.
- 5
Mix soy sauce and corn starch in a small bowl.
- 6
Once the vegetables are cooked, turn heat down to medium low. Add the soy sauce corn starch mixture to the pan, stir through. (If it's too salty for your taste, just add a little water at a time, tasting it.) Cook only until the sauce is thickened and bubbly.
- 7
Add the cooked noodles to the pan, lightly toss, making sure that the noodles are coated in sauce. Serve. Enjoy!

I have been making this for years. But I used to buy the chow Mein packet mix. I thought 'how hard could it be to make it myself?'. The answer is 'really easy!'. It's basically oyster & soy sauce, ground cumin & coriander, throw in some chicken and veggies of your choice and some noodles. That's about it! So nice and a good way to get rid of those veggies that need to be used. Ground beef instead of chicken pieces works well too. Enjoy! 😀 ChrisO505 -
Vegetable Chow Mein - Stirfried Noodles Vegetable Chow Mein - Stirfried Noodles
Stirfry seems simple, but it can be really tricky. I have been making stirfries my entire life and just haven't been able to get it right... Until recently. Every single time I had cooked a homemade stirfry, I would end up with a soupy mess. Vegetable sweat=not pleasant. Even cooking the vegetables to perfection is an art. There is nothing worse than a chowmein with vegetables that have been completely obliterated! The keys to making this method work are stirfrying the vegetables separately, working quickly, always cooking on high and adding a flavorful sauce at the very end. Do not, I repeat, DO NOT cook everything together in an effort to simplify the recipe. Trust me. You won't regret using the extra dishes.Feel free to use the vegetables of your choice. You may not go through all 7 tablespoons of sesame oil. Use only as much as you need to get the job done and to help keep everything from sticking or burning. Izandro -

Veggie Packed Chow Mein Veggie Packed Chow Mein
A healthy-ish spin on the chow mein we all love from asian restaurants. Some of the noodles are just replaced with ALL the vegetables. This is best prepared in a wok, but if you cook with a electric stove a large sautee pan with high sides will do. I use dried noodles called "Wok Nudeln" here in Germany. I never saw the equivalent in the states, but then again I wasn't looking. It will work with any asian egg noodle, however. You will just skip adding water to the pan when cooking the noodles. If you're lucky enough to have access to fresh noodles, you don't need to do anything extra. If you're using the longer noodles that come kinda like blocks you should blanch them just until they separate. Remove from heat and toss with sesame oil. Garnish with scallion greens and dried chili peppers. Goes great with stir fry. Jon Valdez -

Beef chow mein with kale and sweet pepper Beef chow mein with kale and sweet pepper
Chow mein with crispy noodles is one of my all-time favourite things to eat. Usually, if I'm ordering it at a restaurant, I'll get the seafood version with prawns, fish, scallops and other goodies because it has more of the umami funk I love. My wife and daughter aren't quite as fond of that, so for this version I stayed with milder but still delicious beef, which I velvetted to get it as tender as possible. I also used kale and sweet pepper I already had in the fridge. Truthfully, they can be swapped with just about any other veg of your preference. However you go about it, it's gonna be delicious.
