I have been making this for years. But I used to buy the chow Mein packet mix. I thought 'how hard could it be to make it myself?'. The answer is 'really easy!'. It's basically oyster & soy sauce, ground cumin & coriander, throw in some chicken and veggies of your choice and some noodles. That's about it! So nice and a good way to get rid of those veggies that need to be used. Ground beef instead of chicken pieces works well too. Enjoy! 😀

Ingredients

  1. 500 gramsChicken thigh fillet, sliced
  2. 1/2 smallWombok cabbage, sliced
  3. 1 cupRed cabbage, sliced
  4. 1 largeCarrot, julienned
  5. 1 largeZucchini, julienned
  6. 1 mediumBrown onion, into thin wedges
  7. 3/4 cupPeas and corn
  8. 1 cupCauliflower florets
  9. 1/2Green pepper, sliced
  10. 2Packets 2 minute noodles, cooked
  11. 3 stickGreen onion, sliced
  12. 1/3 cupSoy sauce
  13. 1/4 cupOyster sauce
  14. 1 tbspGround cumin
  15. 1 tbspGround coriander
  16. 1 tspMinced ginger
  17. 1 1/2 tspMinced garlic
  18. 2 tbspSweet chilli sauce
  19. 1 tspCracked black pepper
  20. 2 tspSesame oil
  21. 1Peanut oil for frying

Cooking Instructions

    Prepare veggies. Keep brown onion in separate bowl. Keep cabbages in separate bowl. Green onions in another small bowl and all other vegetables in another bowl together.

    Slice chicken and set aside.

    Cook noodles- strain and set aside.

  4. 4

    In a large wok. Add some peanut oil and fry brown onion for two minutes on high heat. Add garlic and ginger and cook for a further minute, stirring continuously. Remove and set aside.

    Now stir fry chicken in batches and set aside with onion.

    I like to clean the wok now by adding water, bring to the boil and clean wok with a plastic egg flip. Tip out water and you are right to continue.

    Add some more peanut oil and and stir fry veggies (carrot, capsicum, zucchini, cauliflower, peas and corn) for 3 minutes.

    Add sauces and spices. Stir well.

    Add cabbage and stir fry for a further 3 minutes, stirring all the while.

    When you are happy that veggies are cooked to your liking, return the cooked chicken- onion- noodles. Stir well and serve.
