This is a base recipe for muffins. Add your own variations ie coco powder for chocolate muffins or add in raisins into the finished batter. The change of oven teperature is to help the miffins dome nicely. Also quick and easy to make.

I sifted double amouts of the dry ingredients and kept some in a sealed bag so that I can have a quick getaway muffin when I'm lazy.

Ingredients

30 mins
15 servings
  1. 2 cupflour
  2. 1 1/3 cupsugar (more or less depending on taste)
  3. 4 tspbaking powder
  4. 1egg
  5. 1 cupmilk
  6. 4 tbspvegetable oil

Cooking Instructions

30 mins
  1. 1

    Preheat your oven to 220℃.

  2. 2

Sift the flour and baking powder at least twice.

  3. 3

    Stir in the sugar.

  4. 4

In a separate bowl, beat the egg lightly then pour in the milk and oil. Your wet ingredients should be a little lesser than half of your dry ingredients.

  5. 5

Make a well in the middle of the dry ingredients and pour in the wet.

  6. 6

With a fork, beat lightly in circular motions starting from the middle and working outwards.

  7. 7

Your batter should be very thick and lumpy, so that it drops off the spoon. Add milk if it is too dry and flour if too wet.

  8. 8

Fill your muffin cups about two thirds and bake for about twenty minutes or until golden brown. Turn down the oven temperature to 190℃ as soon as the muffins are in.
