In search of snacks for kids and work, I try various recipes for savory muffins. This recipe is by Ermioni Tylipaki from her book "In the Kitchen of Flavors" and, as she notes, it allows for many variations.

Cooking Instructions

Sift the flour into a bowl and add the baking powder and paprika. Add salt and pepper to taste.

In another bowl, mix the egg with the milk and oil.

Pour the wet ingredients into the dry ingredients and mix with a spatula until combined.

Grate the Gruyère cheese and add it to the bowl. Then add the green onion, turkey, and bell pepper, and mix until the mixture is uniform.

Place the mixture into muffin cups and bake in a preheated oven at 350°F (180°C) for 20 - 25 minutes, until lightly golden. Let cool for 10 minutes and then remove from the molds.

These are our standard apple snack. Sweet and sour ruby apple chunks are scattered throughout the muffin. They have a gentle cinnamon aroma. The abundant amount of milk and yogurt makes them moist and fluffy. Kids love these autumn flavored first-rate muffins. (^-^)It's best to use Ruby (Jonathan) apples. If you use a different brand, it's a good idea to add some lemon juice to offset the sourness. Ruby apples are small, so if you use a brand of larger apples please adjust the amount accordingly. I kept the skins on this time but feel free to peel them if you would like. Adjust the amount of cinnamon to your taste.
