My sister is a health nut and introduced me to this unconventional breakfast cookie. I have made lots of variations and they are always a big hit even with those who aren't as health conscious.
Cooking Instructions

Mix all ingredients until wet.

The dough should form soft balls. If dough is too dry, add a tablespoon of almond milk. If it is to wet, add more oats.

Place about 16 balls on a greased baking sheet.

Bake for 8-10 minutes at 375°F.

I based these on a black sesame cookie recipe from an egg, butter, milk, and sugar-free recipe book. The original recipe called for whole wheat flour and katakuriko, but I didn't have enough whole wheat flour, so I blended it with cake flour. I also added more maple syrup and left out the sesame seeds.You can change the ratio of cake flour and whole wheat flour, if you like.
