Borracho beans are mexican tradition!! They're amazing! For anyone new trying them out, you cannot taste the beer. It is a bit spicy but I promise just a bit. If you want it more spicy, add in another Serrano pepper.

Ingredients

  1. 1 lbDry pinto beans
  2. 8 cupChicken stock or broth
  3. 12 ozMexican lager (Modelo, Dos XX)
  4. 6 sliceBacon strips (cut each strip into 4 pieces)
  5. 1Onion (chopped)
  6. 6Garlic cloves (peeled)
  7. 2Serrano Peppers chopped
  8. 1 tspCumin
  9. 1 tspsalt
  10. 1/2 tspGround black pepper
  11. 1/2 cupCilantro (chopped)
  12. 2Weiners

Cooking Instructions

    Make sure you clean out your beans. Get rid of any split beans, rocks etc.

    Place beans in a large pot and cover with 2-3 inches of water. Bring to a boil and boil for 2 minutes.

    Turn off heat, cover and let stand for one hour.

    Strain beans.

    Place beans, chicken stock, beer, bacon, onion, garlic, weiners, Serrano peppers, cumin, salt, and pepper in a large pot and stir to combine.

    Over high heat bring to a boil.

    Once boiling bring heat down to a simmer.

    Cover, placing the lid off center to allow to vent.

    Simmer for 2 hours or until the beans are soft.

    Added the cilantro in 30 mins before the 2 hours was up.

    Taste and add any salt or pepper if needed.
