Did you know that black beans are actually purple? They contain a pigment called anthocyanin, which are also found in red cabbage and blue berries, and which aid in the prevention cell and tissue damage, in the form of oxidation. Not only that, black beans are also a great source of protein and fiber which promote digestion and heart health.

Note:
* You can substitute can black beans for freshly made ones.
**You can substitute dried cilantro for fresh one.

Ingredients

  1. 1 can (15 oz)Black beans*
  2. 2Jalapeño peppers
  3. 1/3 cupOnion
  4. 1Bay leaf
  5. 1/4 tspCumin
  6. 1/4 tspRed pepper flakes
  7. 1/4 tspBlack pepper
  8. 1/2 tspDried cilantro**
  9. 2 tbspExtra virgin olive oil

Cooking Instructions

    Assemble all ingredients.

    Heat oil over medium heat. Add onions and cook for 1-2 minutes, stirring constantly.

    Add jalapeños and bay leaf. Cook covered for 3 minutes, stirring often.

  4. 4

    Turn heat to medium low. Add black beans and the rest of the spices (cumin, red pepper flakes, black pepper, dried cilantro) and cook covered for an additional 4 minutes.

  5. 5

    Remove from heat and serve warm.
