Ingredients

  1. Wet ingredients
  2. 2cups shredded carrots
  3. 1/2cup shredded coconut
  4. 1/2cup golden raisins
  5. 1/2cup canola oil
  6. 1/2cup plain yogurt
  7. 2eggs
  8. 1tsp. vanilla
  9. Dry ingredients
  10. 3/4cup brown sugar
  11. 1tsp .baking powder
  12. 1tsp. cinnamon
  13. 1/2tsp. salt
  14. 1/4tsp. baking soda
  15. 1/4tsp. nutmeg
  16. 1 1/2cup all purpose flour

Cooking Instructions

    Mix all wet ingredients and beat until everything is well incorporated.

    Mix all dry ingredients. Then add them to wet mixture a little at a time until everything is completely mix.

  3. 3

    Divide mixture equally and pour in two loaf pans. Bake between 55-60 minutes for 350°F.
