Ingredients

  1. Dry Ingredients
  2. 3 cupbread flour (or all purpose flour)
  3. 1 1/2 tbsppumpkin pie spice
  4. 2 tspbaking soda
  5. 1 1/2 tspsalt
  6. Wet Ingredients
  7. 3 cupgranulated sugar
  8. 1 canpumpkin puree (15 oz)
  9. 4 largeeggs
  10. 1 cupcanola oil
  11. 1/2 cuporange juice
  12. 1orange-zested and squeezed for juice
  13. Other Ingredients
  14. 1 cupCranraisins
  15. 1/2 cupchopped walnuts plus 1/4 cup for topping

Cooking Instructions

    Preheat oven to 350º.

    Mix dry ingredients in medium sized bowl. Set aside.

  3. 3

    Mix all wet ingredients with a mixer until well incorporated.

  4. 4

    Add orange zest and juice of the whole orange.

  5. 5

    Gradually add dry ingredients to wet mixture until well combined.

  6. 6

    Fold in 1/2 cup nuts and cranraisins.

  7. 7

    Pour batter into 2- 9 x 5 loaf pan greased with nonstick cooking spray. (yes, this makes 2 loaves)

    Bake for 1 hour and 20 minutes to 1 hour and 30 minutes until a toothpick inserted into the center of the loaf comes out clean.

    Once cooled, take the loaves out of the pans and let cool completely on a wire rack. Serve with warm butter or jelly. Enjoy!
