Love refreshing mint and cucumber and love refreshing water melon and mint . The cheese is optional but the slight saltiness marries wonderfully with the sauce, melon and cucumber.

Ingredients

4 servings
  1. 1 smallto medium Mellon of choice
  2. 1small salad cucumber
  3. 150 gramsBlue cheese or feta , Stilton or gorgonzola (cheese is optional)
  4. 2 1/2 tbspolive oil, extra virgin
  5. 3to 4 tablespoons of runny honey
  6. 3to 4 tablespoons creme fraiche
  7. 2 tbspbalsamic vinegar ( white or red )
  8. 1 tspof a hot spicey sauce like Harissa, Peri Peri or similar
  9. 1 pinch of salt (salt substitute )if not using the cheese
  10. 1 pinchof freshly cracked black pepper
  11. 6small fresh leaves of mint (optional)

Cooking Instructions

    Cut the melon into half short way across to make a round bowl when empy. Scoop out he flesh and set the empty halves aside

    Cut the cucumber and scooped out melon into small chunks, remove seeds from cucumber and melon if you like

  3. 3

    Now mix all the other ingredients one after the other in a separate bowl to make a dressing

    Chop and add the mint if using gently fold into the cucumber and the melon. Add the dressing and again fold under gently .

    Cut the cheese into small cubes and sprinkle over top if you are using it

  6. 6

    Chill for 10 to 15 minutes

  7. 7

    Serve in set aside empty melon shell, this makes four small servings.
