I love Irish Stew, but not with Guinness. I came up with this a few years ago, and it has gone over very well with family and friends since. Lamb may be substituted for beef.

Ingredients

4 servings
  1. 1 lbBeef Stew cubes
  2. 1 tbspVegetable oil
  3. 4 cupwater
  4. 1 1/2 tbspbeef bullion granules
  5. 1/2 tspblack pepper
  6. 1 tspthyme
  7. 1 tsprosemary
  8. 1 tbspchopped parsley
  9. 2 clovegarlic (minced)
  10. 2carrots (medium) - diced
  11. 3potatoes - diced
  12. 1onion (medium) - cut in wedges
  13. 3 cupcabbage (chopped)

Cooking Instructions

  1. 1

    Brown beef in a heavy pot, in oil, over medium heat

  2. 2

    Add garlic to pot. Cook for 2 minutes.

    Add water, bullion, thyme, rosemary, parsley, and pepper to pot. Simmer for 1 hour.

    Add remaining ingredients, except cabbage. Cover and simmer for 45 minutes.

    Add cabbage to pot. Cover, and simmer until cabbage is done.
