  1. 1/4 cupfresh lime juice
  2. 1 tbspFish sauce
  3. 1 tbspsugar
  4. 2Thai chiles, thinly sliced
  5. 1small garlic clove, finely grated
  6. 2 tbspcanola oil
  7. 3English cucumbers, halved lengthwise, seeded and sliced crosswise, 1/4 inch thick
  8. 1 cuppacked cilantro chopped
  9. 1/2 cupsalted roasted peanuts
  10. 1/2small red onion, very thinly sliced
  11. 1kosher salt

Cooking Instructions

    In a small bowl, whisk the lime juice with the fish sauce, sugar, chiles, garlic and oil. In a large bowl, toss the cucumbers, cilantro, peanuts and onion. Add the dressing and toss to coat. Season with salt and serve right away.
