Ingredients

  1. 1 1/4 cupplain flour
  2. 1/2 tspbicarbonate of soda
  3. 1/2 tspbaking powder
  4. 1/2 tspsalt
  5. 3/4 cuppeanut butter (I used crunchy for more texture )
  6. 4 ozsoften butter
  7. 1/3 cuplight brown sugar
  8. 1/3 cupgranulated sugar
  9. 1egg
  10. 1 tspvanilla extract
  11. 1/2 cupjam/jelly (depending on where your from)

Cooking Instructions

    line a tray with baking paper and preheat the oven to 180°c/350°f

  2. 2

    sieve flour, baking powder, bicarb and salt together

  3. 3

    beat butter and peanut butter together. add both sugars and beat until creamy texture. add the egg and vanilla extract then combine

  4. 4

    fold in the dry ingredients with the wet until all lumps are gone

  5. 5

    using a teaspoon amount of mixture, divide up until all mixture on tray but spaced apart. use another lined tray if you need

  6. 6

    bake in oven for ten minutes. remove and carefully press down the centre with the back of a teaspoon. put back in the oven for another 6-7 minutes until they are slightly golden on the edges. place in a wire rack to cool

  7. 7

    while the cookies are cooling, warm the jam in a pan until loose and runny. carefully spoon the jam into the wells of the cookies and leave to cool until the jam has set
