Tasty little breakfast bites and so easy to make so more time with friends and family.
Cooking Instructions

In a skillet pan set on medium low, add butter, melt, and add onions. Leave them in the pan to slowly caramelize for 10 minutes. Stir and cook 10 more minutes or until a golden caramelized color.

Remove from pan and set aside in large bowl. Add canadian bacon to pan and on medium cook till crispy.

Add all ingredients in bowl with onions. Mix thoroughly.

Preheat oven to 350°F.

Grease 12 muffin cups and divide mixture amongst them, filling almost to top.

Bake for 20 - 30 minutes or until set.

Serve with toast and fresh fruit for a complete breakfast. enjoy!

With company or just family this gives you a great breakfast while still spending time together without the fuss!

I had leftover ham so I cubed it and crisped like I would for canadian bacon! Love making these with what's on hand:-)

If not then do what I do toss the ready made ingredients from the skillet into a oil brushed baking pan and then add the eggs. This is a bit of extra work but at the end it is all worth it. 🙂Who knows maybe someday I will be able to afford a nice size oven, I will keep hoping 🙂 Foodzesty -

I wanted to eat a fluffy frittata. So, I made this by adapting Bill Granger's fluffy scrambled eggs.It's important to fold the eggs. It's really delicious with black pepper! But, since I have kids, I made it with white pepper. You can also use a 26 cm frying pan; however, it may be hard to get in and out of the oven and may be heavy, so be careful.
