Ingredients

  1. Batter
  2. 1 cupuncooked rolled oats (instant or regular)
  3. 1 1/4 cupboiling water
  4. 1/2 cupbutter or margarine
  5. 1 cupgranulated sugar
  6. 1 tspvanilla
  7. 2eggs
  8. 1 1/2 cupall-purpose flour
  9. 1 tspbaking soda
  10. 1/2 tspsalt
  11. 3/4 tspground cinnamon
  12. 1/4 tspground nutmeg
  13. Topping
  14. 1/4 cupbutter or margarine, melted
  15. 1/2 cupbrown sugar
  16. 3 tbspmilk or cream
  17. 3/4 cupflaked coconut
  18. 1/3 cupchopped nuts (optional)

Cooking Instructions

    In a shallow bowl, soak oats in boiling water for 20min. or until softened.

    Meanwhile, beat butter and sugar until light and fluffy.

    Beat in eggs and vanilla.

  4. 4

    Sift flour, baking soda and spices together. .

  5. 5

    Fold soaked oats in with the butter mixture.

  6. 6

    Sift flour mixture over the oat mix and fold in.

  7. 7

    Pour into a greased 9x9 pan.b

    Bake at 350 for 40-50min. or until a toothpick comes out clean.

    Mix all topping ingredients.

    Pour topping over cake and put back in oven and continue baking until golden and bubbly.

    **I waited till there was about 10-15min left of baking time and poured the topping on and placed the cake back in the oven.

    **You may also add fruit to the cake and change up your nuts. In this one, I added chopped apricots and put walnuts in the topping.
