Ingredients

50 servings
  1. For the pie filling
  2. 1/4kilo chicken breast (pieced)
  3. 2large carrots (diced)
  4. 1large onions (sliced)
  5. 2fresh yellow bonnet pepper (thinly diced
  6. 1 tablespoonwhite powdered pepper
  7. 8large irish potatoes (diced)
  8. Seasoning
  9. Salt
  10. Little pastry flour (for thickening)
  11. 1 tablespooncurry powder
  12. 1 tablespoonthyme
  13. 1cooking spoon olive oil
  14. For the dough
  15. 6 cupspastry flour
  16. 3egg yorks
  17. 2 teaspoonwhite vinegar
  18. 1/4 kgSalted butter
  19. Ice cold water
  20. Pinchsalt

Cooking Instructions

    For the pie filling:-put the oil in a pot and add the sliced onions, thyme and fry for 10 seconds

  2. 2

    Then add the thinly sliced chicken breast and diced potato with carrot

  3. 3

    Then add curry seasoning,salt, white pepper, yellow pepper and water to cook

  4. 4

    When it has cooked for 20-25minutes, mix the little four in water and pour in the pot to thicken it. Then allow to boil for 4minutes. Set the pot down and allow the filling to be completely cooled

    For the dough:- pour the cold flour in a bowl with pinch of salt and add the diced butter then mix with a shortening mixer

    Mix the egg and vinegar together and pour in the flour. Then mix with a fork

    Then gently pour in the ice cold water to form a firm dough and mold gently. Do not over work the dough

    Wrap in a cling film and place in the fridge for 30minutes

    Then remove and roll out dough with a rolling pin. Fold back and place in fridge for 10minutes

  10. 10

    Then roll out again and cut with a pie cutter and add the completely cold filling

  11. 11

    Then place on a baking pan lined with parchment paper and egg wash then place in a pre heated oven at 180degrees until slightly brown
