  2. 225 gramsbutter
  3. 225 gramscaster sugar
  4. 4eggs
  5. 225 gramsself raising flour
  6. 1 tbsplemon zest
  7. drizzle topping
  8. 85 gramscaster sugar
  9. 80 mllemon juice

Cooking Instructions

    preheat oven to 180C (350F) and grease a loaf tin

  2. 2

    beat together the sugar and butter until pale and creamy

  3. 3

    beat in the eggs one at a time

  4. 4

    fold in the flour and lemon zest

  5. 5

    pour the mixture into the tin and bake for 45-50 minutes

  6. 6

    once the cake is out of the oven, mix the lemon juice and the sugar together. prick the top of the cake all over with a fork or skewer and drizzle the lemon juice mix all over the top of the warm cake. leave to cool in the tin
