  1. 8chicken drumsticks, skin on
  2. 1yellow capsicum, chopped
  3. 1brown onion, chopped
  4. 1red chili, chopped
  5. 1 tbsptomato paste
  6. 2 tbspred wine vinegar
  7. 1/2 litrewater
  8. 1 canchickpeas
  9. 1 tbspyoghurt
  10. curry paste
  11. 1yellow capsicum
  12. 1 tbspturmeric
  13. 2 tspcurry powder
  14. 1 bunchcoriander stalks and roots
  15. 1chicken stock cube
  16. 1thumb ginger
  17. 1red chili
  18. 1brown onion
  19. 4 clovegarlic
  20. 1 tbsphoney
  21. Rice
  22. 1 cuprice
  23. 2 cupwater
  24. 1 pinchsalt
  25. 1rind of lemon

Cooking Instructions

70 mins
  1. 1

    Shallow fry pre-seasoned chicken, not touching, in metal oven-proof pan, to golden.

    Remove chicken and fry onion, chili and pepper in the hot fat

  3. 3

    Add tomato paste, then vinegar, sizzle

  4. 4

    Add paste plus half litre water and turn down heat

  5. 5

    Add tin chickpeas and put chicken back in

  6. 6

    Put pan in oven. 180C/ 350°F 45 mins

  7. 7

    Steam rice, add lemon rind on top, serve w wedges of lemon on side. drizzle of yoghurt and all the remaining coriander leaves. top w a little chopped red chili

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
