Mexican Sweet Potato Hash with Bacon and Cucumber

Ingredients

2 servings
  1. 4Sweet Potatoes (cut into cubes)
  2. 1shallot (thinly sliced)
  3. 1cucumber
  4. 3 tspground cumin
  5. 1 tspsalt
  6. 3 tspchili powder
  7. 1 tsplime juice
  8. 2eggs
  9. 1 bunchcoriander
  10. 2 tbspolive oil
  11. 2 slicebacon (optional)

    The ingredients

    Bacon is optional. If you want to use it, put bacon in a wok and cook over medium heat until 70% cooked. Scoop it out and leave it aside for later use.

    Put the potatoes in and cook over medium-high heat, stirring occasionally, until brown and tender, about 15 minutes. Add bacon back in once potatoes are almost done.

    Add the shallot, cucumbers. Cook for another 3 mins. Stir occasionally.

    In with cumin and chili powder. Add salt to taste. Cook for another minute.

    Serve the hash with a fried egg and coriander on the top.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
