Ingredients

6 servings
  1. 1 tbsp.olive oil
  2. 1/2yellow or red onion, diced
  3. 1small bell pepper, diced
  4. 2 clovesgarlic, minced
  5. 2 cans (15 oz.)each black beans, drained and rinsed
  6. 1 tsp.cumin
  7. 1/2 tsp.each salt, pepper, oregano, turmeric
  8. 1/3 cupunsalted vegetable broth or water
  9. Rice, for serving
  10. Fresh lime wedges, for serving
  11. Sour cream, for serving

Cooking Instructions

    Heat the olive oil in a large skillet over medium heat. Once it's hot, add the peppers and onions. Cook, stirring often, for 5 or so minutes, until they are softened and the onion is translucent.

    Add the garlic and cook and stir just a minute or so, until fragrant. Then stir in the black beans, seasoning and broth.

    Let it come to a simmer and let it cool for 4-5 minutes, until the liquid has mostly cooked off.

    That's it. Serve immediately. We like ours over brown rice, but eat however you'd like. Store any leftovers in the fridge.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights.
