Extra Cheesy Ham and Potato Casserole

I had left over potato au gratin, ham and frozen broccoli pieces I use for soups and needed a easy dish to create :-)

This is really yummy for breakfast or dinner. I make this often and the last time I made it I added 1 tablespoon ranch powder to the sour cream mixture and used 2 teaspoons garlic salt instead of adding salt and garlic powder. 🤗

I had a few items that had to be used up. Namely the massive amount of smoked ham I had. This wasn’t the sexiest, but it was satisfying.

This casserole is amazing! My fav! Its also great with leftover ham, chicken or turkey! diced up into it to make it a main dish, and a great way to use leftover meats!

This recipe was taken from an old cook book. Lost the recipe and found it, so I decided to put it in here. I also use extra ham and cheese, because my family likes ham and cheese. The photos are of a triple batch of noodles.

A different take on the classic shepherds pie, except it uses scalloped potatoes instead of mashed.

Could top with French fried onions, melted butter covered corn flakes, or panko mixed with melted butter.

And the corn flakes can also be substituted with Pretzels, French fried onions, or again, anything you desire or have around. All you need to do is mix and pop in the oven!
