It literally makes itself while you are busy doing other things. I thew them on the bbq while cooking up a bunch of other things.

Great camping food. Just throw it on hot coals.

If you have not eaten squash roasted whole; this will blow your socks off. Simple yet aromatic and full of nutty flavors.

Ingredients

4 servings
  1. 1-2butternut squash
  2. 2 stalksfresh chopped green onions
  3. 2 tablespoonsdried oregano
  4. to tastepepper
  5. to tastesalt
  6. Olive oil (for drizzle)
  7. 1/2 cupany high heat cooking oil
  8. Fresh chives
  9. Fresh thyme

Cooking Instructions

    Lightly brush the squash with a high heat oil prior to placing on bbq. You do not have to brush it again in any other steps.

    Place the squash on bbq.

    Periodically turn the squash until it feels tender from the outside.

    Cut open squash. Sprinkle thyme, oregano and green onions.

    Depending on the size of the seeds, you may decide to just leave them in as they are edible and adds a nutty flavor. If not, gently remove them and leave the connecting tissues intact.

    Drizzle with olive oil. Add a few cracks of fresh pepper and salt to taste.

    The best part? Slice into sharable sizes and plate. I actually had a nice dish plated but my family couldnt wait...and I don't blame them!

mmm! I love roasted butternut. I haven't tried roasting it whole yet (or on the grill), nice idea!
