This is a moist chocolate cake with a rich but light and creamy hazelnut filling. The filling is so good with the chocolate cake. Chill the cake for easy slicing, but serve at room temperature.

Ingredients

  1. FOR CHOCOLATE CAKE
  2. 1 3/4 cupsall purpose flour
  3. 2 cupsgranulated sugar
  4. 3/4 cupunsweetened cocoa powder
  5. 1 1/2 teaspoonbaking powder
  6. 1 1/2 teaspoonbaking soda
  7. 1/2 teaspoonsalt
  8. 2large eggs
  9. 1 cupwhole milk
  10. 1/2 cupcanola oil
  11. 1 teaspoonvanilla extract
  12. 1 cuphot water
  13. FOR THE HAZELNUT FILLING AND FROSTING
  14. 3 cupsheavy whipping cream, cold
  15. 8 ouncesmascarpone cheese, at room temperature
  16. 1 cupnutella, hazelnut spread
  17. 2 cupsconfectioner's sugar
  18. 1 teaspoonvanilla extract
  19. GARNISH
  20. 1/4 cupnutella hazelnut spread
  21. white and dark chocolate shavings, as needed
  22. chopped hazelnuts, as needed

Cooking Instructions

    MAKE CHOCO L ATE CAKE

    Spray 3 - 8 inch cake pans with bakers spray. Preheat oven to 350

  3. 3

    In a bowl whisk together flour, sugar, cocoa power, baking soda, baking powder and salt.

    In another bowl whisk together, eggs, milk, canola oil, vanilla and add to flour mixture and beat just until smoooth, beat in hot water just until combined

    Pour evenly into prepared pans and bake for about 15 to 18 minutes just until a toothpick comes out just clean. Cool in pans 15 minutes then remove and cool completely

    MAKE NUTELLA FILLING AND FROSTING

    Beat mascarpone and nutella until smooth

    In another chilled bowl beat cream until soft peaks form

  10. 10

    Add sugar and vanilla until it holds its shape

    Fold nutella/mascarpone mixture into whipped cream in 3 additions until uniform in color

    ASSEMBLE CAKE Place 1 layer, bottom up on serving plate

    Spread some filling on

    Add second layer of cake, bottom uo

    Frost with more filling

    Add last third layer

    And frost entire cake. Chill at least 2 hours before adding garnishes

    GARNISH CAKE

    Heat nutella spread just until spreadable in the microwave

    Drizzle over cake and decorate with chopped white and dark chocolate and chopped hazelnuts

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her.
