Ingredients

  1. 1 pounddry lentils
  2. 2 tablespoonsolive oil
  3. 1 teaspoonminced garlic
  4. 1yellow onion chopped
  5. 1large celery stick chopped
  6. 1 Teaspoonsalt
  7. Pepper
  8. 1 containervegetable broth
  9. 1/2 teaspoonground cumin

Cooking Instructions

    Rinse lentils, drain and set aside

  2. 2

    Heat olive oil in stockpot over medium heat

  3. 3

    Add garlic and cook for a minute

  4. 4

    Stir in the onion and celery, season with salt and pepper and cook until tender, about 6-8 minutes

  5. 5

    Add lentils, vegetable broth, and cumin, and bring soup to a boil

  6. 6

    Reduce heat and simmer the soup, covered, for 35 to 40 minutes
