My daughter started baking by herself at age 10 and this is her favorite pie to make for the holidays - especially when others requested it for their family. It originated from the recipes of B. Smith and transformed into something more. I stated this will make 2 8in deep dish pies but it would probably make that plus a regular size pie. Enjoy!

Ingredients

  1. 2 (8 inch)pie crusts
  2. 4sweet potatoes (about 2 lbs)
  3. 1 cupssugar
  4. 1/2 cupbrown sugar
  5. 1 tspvanilla extract
  6. 1 tsplemon extract
  7. 1 tspnutmeg
  8. 1 tspcinnamon
  9. 14 oz.can of sweetened condensed milk
  10. 1 stickbutter melted
  11. 2large eggs

Cooking Instructions

    Preheat oven to 400°F.

    Place sweet potatoes in oven and bake until done. Once done peel and mash in large bowl.
    (Some boil the potatoes which is fine however is take all the good Flavor out of the potatoe - just remember to drain when finished)

    Add sugar, nutmeg, cinnamon, condensed milk, butter, eggs, and vanilla to potatoes; whisk until mixture is smooth. Pour evenly into crusts.

    Bake until edges of filling are set and center is soft, 28 to 30 minutes. Cover edges of crust with foil to prevent over browning, if necessary. Cool on wire rack.
