Boiled Plantain with Minced Meat & smoked Fish Veggie Sauce

Am a Plantain lover.
And I always try to find new ways to just enjoy my Plantain...
So I tried Minced Meat and fish in Our local vegetable called Ugwu.... quiet frankly, am just to recover from the taste...
This Sauce is just superb and a must try for all.
It's easy, delicious, super healthy and so good,e ven.if I say so myself....😂😂😂

Cooking Instructions

Wash Plantain, peel and cut into 3. Boil till tender in water with a pinch of salt

To make Sauce..put the mince meat in a pan, add onions, galic, salt, pinch of black pepper and cook till turns Dark in colour.

Pour oil in another Sauce pot, once it get hot, add chopped onions, garlic, tomatoes and chopped pepepper stir, pour in the cooked minced meat add cube and black pepper. Allow to simmer for 4mins

Stir and add in the shredded smoked fish and taste for salt...

Lastly add in the sliced Ugwu leaves and give it a very good stir...2 mins later remove from heat and serve along with the boiled Plantains...

Its summertime and I wanted to make a lentil dinner. Usually I make Lentil Stew but its too hot for that. So I wanted to do something else. I found this recipe in my Forks Over Knives cookbook called Spaghetti with Lentil Ragu. This "meat" sauce is based on that recipe. The recipe calls for diced tomatoes but I chose a can of crushed tomatoes to make a sauce. I also put the lentils through a blender to make the lentils more ground meat like .
