Condensed Milk COTTON CAKE 5 Ingredients Smooth & Silky Recommended

Yep! Just 5 ingredients and you can make a super silky, super soft cake!
Fell in love with this simple and humble cake.. hahaha
The texture is very smooth, with fine pores, and melts in your mouth :)
The process took only about 8-9 minutes... it's just the baking that took a bit longer... and then an accident happened! I was making it early in the morning at 6 AM, still a bit sleepy... forgot to set the temperature, asked the housekeeper to set it to 160, but she set it to 200! Oh no...
I didn't realize it until I thought 'wow, this cake is rising so fast in the oven like a balloon... then... CRACK!! Oh no... it cracked...
A big NO for cotton cake to crack on top... except for pound cake/chiffon... sigh... then I glanced at the temperature, oh my God, 200 degrees! Hahaha XD
I immediately lowered it to 150 to neutralize... but it was already too late...
I was about to become an angry bird... hahaha
Anyway, the good news is the inside turned out great even though the appearance was not so good... don't judge a cake by its cover #oops
The taste is comforting, feels like going back to childhood... this cake is also healthy for kids, moms :) RECOMMENDED...
This recipe is a result of my own modifications and experiments, honestly, I've made it 2-3 times but this is the result that I think is just right for my taste :D

Cooking Instructions

Heat the butter over low heat until small bubbles appear, then immediately add the flour while stirring continuously with a whisk. Once smooth, add the condensed milk, and remove from heat. -- Then add the flour mixture to a bowl containing the egg yolks, mix well, and set aside.

Beat the egg whites and sugar until stiff peaks form, then gradually fold into the flour mixture from step 1 using a spatula until well combined and homogeneous :)

Pour into a baking pan lined with parchment paper. I used two mini loaf pans.

Bake using the Bain-Marie method. Place the main pan in a larger pan filled with 1.5 cm of water. Bake at 320°F (160°C) for about 45 minutes or adjust according to your oven.

Tadaa, it's done and successfully cracked... next time when I make it again, I'll follow up with a photo of the smooth one... without any accidents!

It was very smooth when I took it out of the pan, as smooth as a baby's bottom... so cute, I wanted to pinch it.

Let's cut it... :) I always cut it while it's hot because I'm impatient. Oh, and the cake doesn't shrink... no shrinkage...

Smooth, fragrant, simple, and delicious! No need for baking powder, baking soda, vanilla, etc... because the aroma from the condensed milk is already fragrant, it can mask the egg smell :)

Believe me, the texture is like cotton, it melts in your mouth... hmmm... disappears quickly hahaha...
