Basil Beets

Product of a trip to the farmers market. Beets and shiso are classy companions.

Hold on!!! You may say well, I don't like beets. This isn't canned beets, pickled beets, or beet mush. This is fresh, with Parmesan cheese, sour cream, and bacon. Yes a bunch of bacon.

So many of the recipes for pickled beets out there call for buckets of sugar and spices that are better suited for pies than for pickles in my humble opinion.This recipe goes the tart savory direction with them instead.Substitute dill seeds or even a sprig of fresh dill for the caraway for a tasty variation.#cookingwithyui

This beet salad is a very different (read: healthier ;) ) version of the beet salad I knew growing up in Newfoundland. It takes a bit of time in terms of prepping your ingredients (mainly the beets and carrots), but it's worth it.This is a great summer salad to serve with a BBQ, or on its own as a lunch. You can adjust the ingredient amounts for lesser portions- this salad serves approximately 6-10 servings if used as a side dish.

When I was a kid, I hated beet(root), but now I love it...only, not pickled in a jar...I love them like this!

Every year, I used to eyeball the ingredients to make this butter, but I ended up with this recipe now. Maybe the authentic kind doesn't use lemon juice or butter, but I use them anyway because my family likes it.I make this butter in bulk whenever I harvest the basil in my home garden.
