6small cooked beets, cut in quarters
2medium tomatoes, cut in pieces
1/4 cupfeta cheese
Approximately 15 basil leaves
1/4 cupolive oil
Salt & Pepper

Mix all of the ingredients together, stir and serve.

Variety :
Substitute basil for mint leaves.
Add your favourite spices.
Add 1/2 cup of corn.

Great side dish to any protein meal.
