Slow-Cooked Ratatouille ♥️ Slow-Cooked Ratatouille ♥️
This recipe is a big hit—even with people who usually aren’t fans of ratatouille! I make it with garden vegetables, often from my neighbors or my parents/in-laws, since I don’t have a green thumb at all! It’s cooked for hours to get that rich, confit texture. I rarely follow recipes and usually cook by instinct—everything can be adapted or improvised😉 For this one, there are no set quantities; just use what you have and adjust to your taste (in the photo, I used a 9-quart Dutch oven—that’s a lot of veggies!😁 I’ll freeze some for winter). Mexican-Style Table (Grilled Meats, Nopales, Pico de Gallo...) Mexican-Style Table (Grilled Meats, Nopales, Pico de Gallo...)
I've named this dish as such because it includes many of the foods typically found on a Mexican table at mealtime. For us, it's special to gather with family or friends in the afternoon or evening, set up a grill, play some music, and prepare all the food together, each person taking on a task and enjoying being together. On this table, we've included grilled meats, guacamole, pico de gallo salsa, beans, cucumbers, and nopales, accompanied by soft drinks or some beers, depending on preference.
