Ingredients

  1. 1 1/2 poundsskinless, boneless chicken breasts, cubed
  2. 1 1/2 teaspoonkosher salt
  3. 1/2 tablespoonghee
  4. 1/2chopped onion
  5. 3 clovesgarlic, minced
  6. 1 teaspoongrated ginger root
  7. 1 teaspoonground coriander
  8. 1 teaspooncumin
  9. 1/2 teaspoonturmeric
  10. 1/2 teaspoongaram masala
  11. 1/4 teaspooncayenne pepper
  12. 1/4 teaspoonground cardamom
  13. 14 ouncecan diced tomatoes, drained
  14. 2 cupscauliflower florets
  15. 1/2 cuplight canned coconut milk
  16. 1/4 cupfresh cilantro leaves, for serving

Cooking Instructions

    Season chicken with salt & pepper

    Press saute button and melt the butter, add onion, garlic, ginger and 6 spices (from coriander to cardamom) and saute until the vegetables are soft and the spices are fragrant, about 2 to 3 minutes.

    Add the tomatoes, add the chicken, remaining 1/2 teaspoon salt and stir, cook high pressure 15 minutes.

    Quick release, add the cauliflower and cook 2 minutes on high pressure.

    Quick release, stir in coconut milk and serve garnished with cilantro.
