Ingredients

  • 1 1/2 poundsskinless, boneless chicken breasts, cubed
  • 1 1/2 teaspoonkosher salt
  • 1/2 tablespoonghee
  • 1/2chopped onion
  • 3 clovesgarlic, minced
  • 1 teaspoongrated ginger root
  • 1 teaspoonground coriander
  • 1 teaspooncumin
  • 1/2 teaspoonturmeric
  • 1/2 teaspoongaram masala
  • 1/4 teaspooncayenne pepper
  • 1/4 teaspoonground cardamom
  • 14 ouncecan diced tomatoes, drained
  • 2 cupscauliflower florets
  • 1/2 cuplight canned coconut milk
  • 1/4 cupfresh cilantro leaves, for serving

Steps

  1. 1

    Season chicken with salt & pepper

  2. 2

    Press saute button and melt the butter, add onion, garlic, ginger and 6 spices (from coriander to cardamom) and saute until the vegetables are soft and the spices are fragrant, about 2 to 3 minutes.

  3. 3

    Add the tomatoes, add the chicken, remaining 1/2 teaspoon salt and stir, cook high pressure 15 minutes.

  4. 4

    Quick release, add the cauliflower and cook 2 minutes on high pressure.

  5. 5

    Quick release, stir in coconut milk and serve garnished with cilantro.
