I am very lucky to live by a place that grinds fresh cornmeal, buckwheat and flour. If you cannot get cornmeal fresh, you can use regular cornmeal. This is not a heavy waffle. It is light and crisp. It is not too "gritty" because of the cornmeal. This is an old family recipe.
