  1. marinade
  2. 5allspice berries
  3. 7pork chops (not smoked, if you can't find them, you can use regular)
  4. 1 clovegarlic, sliced
  5. sprigsthyme
  6. 1 teaspoondried marjoram
  7. 1 cupwhite wine
  8. 1 teaspoondried tarragon
  9. 1/2leek, chopped (mirepoix)
  10. 1carrot, chopped (mirepoix)
  11. 7 gramsmustard seeds
  12. sauce
  13. 130 gramscream cheese (like Philadelphia)
  14. 100 gramsshredded cheddar cheese
  15. 1 2/3 cupsheavy cream (400 milliliters)
  16. 1 cupwhite wine
  17. 1shallot, finely chopped
  18. 50 gramsbutter
  19. 1 bunchchives (washed, disinfected, and finely chopped)
  20. garnish
  21. 1red bell pepper, julienned
  22. 1yellow bell pepper, julienned
  23. 100 gramssugar snap peas, whole
  24. 50 gramswhite onion, sliced
  25. Maggi seasoning sauce
  26. vegetable oil
  27. salt and pepper

    Prepare the marinade and soak the meat in it for 5 hours in the refrigerator.

    Garnish: In a pan, heat oil and sauté onion. Add bell peppers, and once they are halfway cooked, add sugar snap peas. Season with Maggi seasoning sauce, cover for a few minutes, and set aside.

    Heat oil in a deep pan. Remove the chops from the marinade, salt them, and sear. Set them aside in a baking dish.

    Deglaze the pan with white wine and add these juices to the chops. Cover with aluminum foil and bake at 350°F (180°C) for 15 minutes.

    Sauce: In the same deep pan, melt butter, add shallot and mustard seeds, and stir for a few minutes. Add chives, then a little cream. Let it heat up and add the cream cheese. Once dissolved, incorporate the cheddar cheese, let it come to a boil, and season.

    Serve the hot chops accompanied by their sauce and garnish.
