Ingredients

  1. 2 1/2 tbspreal butter
  2. 1/4 smallsweet yellow onion
  3. 1 smallclove garlic, crushed and minced
  4. 1/4 tspdry mustard
  5. 1/4 cupall-purpose flour
  6. 1 literwhole milk
  7. 2 1/2 cupshredded sharp cheddar cheese
  8. 1salt and pepper to taste

Cooking Instructions

    Melt butter in 2 qt saucepan

    Add finely diced onion and garlic and allow to sweat.

  3. 3

    Stir in flour with wire whisk. Cook, on medium heat stirring frequently for about 5 minutes. It should not be thick.

    Add milk slowly. About a cup at a time. Allow to thicken slightly between additions. Once all milk is added allow to heat, not boil. Add shredded cheese while stirring. Stir until cheese is melted.
