In the center of this buttery crisp edged cookie is a dark chocolate mint filled Hershey kiss candy for a refreshing soft minty center. It's also drizzled with a creamy mint drizzle to provide chocolate mint in every bite!

Ingredients

  1. 3 cupsall purpose flour
  2. 1/2 teaspoonbaking powder
  3. 1/2 teaspoonsalt
  4. 1 cupunsalted butter, at room temperature (2 sticks)
  5. 1 1/2 cupslight brown sugar
  6. 1 cupgranulated sugar
  7. 2large eggs
  8. 1 teaspoonvanilla extract
  9. 1 (10 ounce)bag mint filled dark chocolate kiss candies, divided use
  10. For Drizzle
  11. remaining not used mint kiss candies
  12. 2 ouncesmilk chocolate, chopped. I used Lindt extra creamy milk chocolate

Cooking Instructions

    Preheat the oven to 350. Lline a baking sheets with parchment paper

    In a bowl, whisk together flour, baking powder and salt

  3. 3

    In another bowl beat butter and both sugars until light and fluffy

  4. 4

    Add the eggs one at a time beating in each egg, then beat in vanilla

  5. 5

    Add flour.muxture sliwly and mix just until blended

  6. 6

    Take about 1 1/2 tablesoons batter and flatten it

  7. 7

    Place a cold mint kiss in center of dough disk and cover entire kiss with dough

    Roll covered kiss in a ball

    Place 2 inches apart on prepared pans. Bake 11 to 14 minutes until just set. Transfer cookies to racks to cool completely.

    Make Drizzle

    Combine remaining mint kisses and milk chovolate in a bowl and microwave until just melted, stir smooth

    Drizzle over cookies and allow to set

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
