Earlier today, after months of not baking, I finally touched my oven, my true soulmate... I missed it so much. The kids were unusually sound asleep. I left them for a moment and they were still sleeping, so I decided to use the overripe Sunpride bananas on the table that my 1-year-old had been playing with. I had been thinking about these bananas since last night, wondering if I could bake with them. If not, they would end up in the trash tomorrow. Luckily, everything went smoothly. It only took about 8 minutes to prepare, and while it was baking, I went back to the kids' room. I've made this favorite banana muffin recipe so many times that I don't need to check on it. It always turns out beautifully at 180°C (about 350°F) for about 30 minutes, depending on the size of the cups. I love the smell of banana muffins filling the room! I missed it so much! ***

Ingredients

  1. Ingredient A
  2. 3large ripe bananas
  3. 1large egg
  4. 1/2 cupgranulated sugar (I used 1/3 cup granulated and 1/8 cup brown sugar to use up my stock)
  5. 6 tablespoonsmelted butter (I used Anchor)
  6. 1 teaspoonvanilla extract
  7. Ingredient B
  8. 1 1/2 cupsall-purpose flour
  9. 1 teaspoondouble-acting baking powder
  10. 1/2 teaspoonbaking soda
  11. Raisins or chocolate chips, to taste
  12. 1/2 teaspoonground cinnamon, if desired

Cooking Instructions

    Ingredient A: Whisk all the wet ingredients together until well combined. Set aside. :)

    Ingredient B: Sift together until well mixed, add raisins or chocolate chips, mix well, then make a well in the center of Ingredient B, add Ingredient A, and whisk until just combined. Do not overmix, or it may become dense. :)

    Pour into cups, sprinkle with your favorite toppings. Fill only 3/4 full as they rise quite a bit, then bake at 350°F for 25-30 minutes. :)
