Tonight, my seven year olds were on an absolute mission to make their parents the BEST grilled brined chicken kabobs and charred vegetable dinner with chilled Tatziki sauce they've had in quite some time! Ingredients

  1. ● For The Brined Chicken [brine 24 hours]
  2. 3 PoundsChicken Breasts [1" cubed]
  3. 1/2 CupGranulated Sugar
  4. 1/2 CupKosher Salt
  5. 2 tbspGranulated Garlic
  6. 2 tbspGranulated Onion
  7. ● For The Chicken Marinade [1 tsp a piece or to taste]
  8. Fresh Ground Black Pepper
  9. Ground Cumin
  10. Garlic Olive Oil
  11. White Pepper
  12. Lemon Pepper
  13. 4 DashesLiquid Smoke [not extract]
  14. Granulated Garlic
  15. Granulated Onion
  16. Italian Seasoning
  17. Red Pepper Flakes
  18. Dried Oregano
  19. ● For The Tatziki Sauce
  20. 1 PoundSour Cream
  21. 1/2 CupOikos Plain Greek Yougart
  22. 2EX LG Firm Cucumber [de-seeded - fully drained]
  23. 2 tbspFresh Dill
  24. ● For The Fresh Vegetables [as needed]
  25. Bell Peppers [green - red - orange - yellow - 1 1/2" chop]
  26. Red Onions [quartered]
  27. Brown Mushrooms [left whole]
  28. White Onions [quartered]
  29. White Mushrooms [left whole]
  30. Yellow Zucchini [rounds]
  31. Cherry Tomatoes [all colors]
  32. ● For The Sides / Toppers
  33. Lemon Wedges
  34. LeavesFresh Cilantro
  35. ● For The Bread [grilled]
  36. Naan Bread
  37. Flour Tortillas

Cooking Instructions

  1. 1

    Brine your chicken in ice water, 1/2 cup salt,1/2 cup sugar, 2 tbsp granulated garlic and 2 tbsp granulated onion powder for 24 hours.

    Make your Tatziki Sauce. Shredded cucumbers with sea salt draining pictured. Then heavily drained thru cheese cloth.

    For your Tatziki Sauce.

    Mix everything in the Tatziki Sauce section together and chill well.

    Drain your chicken and pat dry.

  6. 6

    Add garlic olive oil with all seasonings, mix and marinate for 2 hours in fridge.

    Fully marinated chicken pictured.

    Gather your fresh vegetables. Chop all at 1 1/2" pieces.

    Gather your Naan Bread or flour tortillas and ready it for a quick grilling. Just enough to char them.

  10. 10

    Grill vegetables on top and meat on open flame bottom. Allow the juices from your vegetables to drip on your meat.

ok this is too weird we use the same plates the samebrand of minced garlic the same dill weed spice jar the same type of yogurt..... smh, lol
