  1. 2 cupsall-purpose flour (255 grams)
  2. 1 1/4 cupwhite sugar (250 grams)
  3. 1⁄2 cup cocoa powder (65 grams)
  4. 2 teaspoonsbaking powder
  5. 2eggs
  6. 1 cupblack coffee, cool (235 milliliters)
  7. 1⁄4 cup oil* (60 milliliters)
  8. 2 teaspoonsvanilla
  9. 1 cupchopped walnuts (125 grams), plus some for sprinkling

    Preheat oven to 350°F or 175°C.

    Whisk together flour, sugar, cocoa, and baking powder in a mixing bowl.

    Add eggs, coffee, oil, and vanilla. Mix until well incorporated.

    Add chopped walnuts. Mix using a baking spatula until evenly distributed.

    Using a ladle pour the batter into paper-lined muffin pan cups.

    Sprinkle additional chopped walnuts on top of each muffin cup.

    Bake for 20 to 25 minutes or until a cake tester inserted in center of one muffin comes out clean.

    Remove and let cool for 5 minutes before moving to a cooling rack.
