Mutton has been an all time favorite dish of my family. This dish is cooked with mutton braised with gravy flavored with aromatic spices and used the dampokhtak slow cooking technique. This dish contains no onion no garlic.

Cooking Instructions

Marinate the mutton with mustard oil, lemon juice and garam masala powder and rest for 4 hrs

Take the curd and add all the dry powders except asafoetida and mix uniformly. In a kadai add desi ghee and once hot add asafoetida,bay leaves, cardamoms,cinnamon stick and fry till raw smell gone. Fry the mutton batchwise till golden brown on high flame and keep aside.

Add in the same oil the curd paste and add little water and cook till paste is fried and then add the fried mutton pieces. Keep cooking on low flame till the mutton gets braised in the spices.

Finally after 1 hr of slow cooking add the mixture to pressure cooker and steam with 5 whistles till your rogan josh is ready. Serve hot with steamed rice. Enjoyyy

Rogan josh is an spicy aromatic red curry of kashmiri origin. Traditionally the dish is cooked with mutton or lamb, you could however use any meat or vegetable you like. There are also substitutions you could make like the mace blade can be replace with 1/2 tsp nutmeg powder.
