Chicken & Corn 🌽 Chowder Soup 🍲|Creamy Chicken & Corn Soup

I am a big fan of chowders, the thick and creamy soups. This winter I tried it with a little twist. I didn't blend the chicken and corn till smooth paste, infact I just ran blender in the soup which left tiny shreds of chicken, and it gave a good taste.
I don't like eggs in the sup so I skipped it, if you like, you can add it in the end and cook for 5 mins.

Cooking Instructions

Cut the chicken breast into thin strips, set aside. Chop the garlic and onion.

Heat a wok and add butter to it. Add garlic and sauté for a minute. Then add onion and sauté for another minute. Add chicken and cook till it’s colour changes. Then add the seasoning and half of the corn, mix well.

Now add water and cook for 15 mins. Then use hand blender to blend the soup.

Now add cream and leftover corns. Mix well and let cook for another 10 minutes. Add the corn flour slurry and cook till the soup thickens.

Season with soya sauce, vinegar and garnish with black pepper, corn and spring onions. Serve and enjoy.
