Baby Lima Beans with Ham and Greens

Lima beans (butter beans) are a delicious and healthy way to get protein and fiber in one dish. Adding greens makes it even better! Instead of soaking the beans overnight I prefer the 1-hour "quick soak" method. The prep work can be done easily at the same time.

Lima beans (butter beans) are a delicious and healthy way to get protein and fiber in one dish. Adding greens makes it even better! Instead of soaking the beans overnight I prefer the 1-hour "quick soak" method. The prep work can be done easily at the same time.
Cooking Instructions

In a large pot, saute the onion and garlic in olive oil for a few minutes.

Add the soaked beans, water or stock, bay leaf, celery salt and pepper. Mix well.

Bring to a gentle boil, cover with the lid off-center, and cook over low heat for 1-1/2 to 2 hours, depending on how you like them. Stir occasionally. You may need to add more water.

During the last 10 minutes of cooking, add the ham and greens.
Mix well - add salt to taste. Serves 3-4. Recipe can be doubled.

I recently went to a local farmer's market and acquired fresh locally grown green beans & radishes. I also recently acquired the knowledge that you can eat radish leaves! 😏 They are actually very nutritious and are similar to using spinach, kale, or any other greens. I had a few slices of ham left and figured why not throw it all together! 🤷🏻♀️👍 I accidentally used too much oil so this was a bit greasy this time but was still very yummy. It was gone before half the family could even get any and I had a few angry children that they'd missed out! 🤦🏻♀️😂 Next time I will definitely have to double the recipe for my large family! 👌 This makes a great side dish or appetizer, and even a delicious main course as well. 👏🤤 Chef Mommy Nessa
