Carrot Halwa with Jaggery

Ingredients

  1. 2.2 poundscarrots
  2. 250-300 gramsjaggery
  3. 3/4 cup edible gum
  4. 1 cup chopped cashews and almonds
  5. 3-4 tablespoons ghee
  6. 3 tablespoons fresh cream
  7. 1/2 teaspoon cardamom powder
  8. 3/4 cup milk

    Grate the carrots and cook them in a pressure cooker with milk for 2 whistles. Fry the edible gum and nuts.

    Break the jaggery into small pieces. In the remaining ghee, add the boiled carrots and sauté.

    Once slightly sautéed, add the jaggery and continue stirring while sautéing. Mix in the cream.

    Crush the fried nuts and edible gum slightly and add them. Mix in the cardamom powder. Delicious and healthy jaggery halwa is ready.
