Cooking Instructions

Chop the cucumber, carrot, tomatoes, onions, dhania into a medium bowl
- 2
Add olive oil
- 3
Add white vinegar
- 4
Add salt
- 5
Add cayenne pepper
- 6
Add lemon honey dressing. To make lemon honey dressing add lemon, honey, salt, apple cider vinegar and cayenne pepper, shake to mix. Refrigerate before serving

I came up with the idea for this recipe thinking that konyaku could be used as a substitute for jellyfish in Chinese style cucumber and jellyfish marinated salad, since frozen konyaku has a texture similar to jellyfish. I posted this recipe because the dish came out very tasty, and the frozen konyaku gave an interesting texture, although it would not be mistaken for jellyfish.Complete the first three steps of the recipe a day before. Once the prepared materials are frozen, cooking takes very little time. The konyaku to be used should not contain fresh yam. This is a simple recipe from my childhood. My stepfather always made this growing up. We ate this as a side dish, as an appetizer, at cookouts,...even as a topper for other foods! He usually only did "Cucumbers & Tomatoes in Italian Dressing" but when I started making it myself in my late 20s I started adding onion because I'm obsessed with them! 😆👌 Then, in my early 30s a good friend made this at her home with the addition of green peppers as she had grown a lot of them that year. So now, my personal recipe has adapted to the inclusion of all of these wonderful foods! I also, play around occasionally with the dressing. 😎👍 This particular time I used a raspberry vinaigrette in place of Italian Dressing & I have also used regular vinaigrettes as well. I was looking for something to go with a steak dish I was trying, called Japanese Steak Rice Bowl. It was perfect, really added a nice offset to the slightly sweet sauce on the steak. Now to be fair, I'm not a huge fan of cucumbers, it's a take or leave it kind of thing. But I tell you what, this thinly sliced English cucumber, in this light pickle was perfection. I used a medium hot red pepper powder, and it was not spicy. The flavors were fresh and just happen to be perfect with the steak. Without the lime juice, it had a very slight acidic taste, if you want it a tad more, use the lime/lemon juice also. Fo Fa -
