Sarso da saag te makke di roti..
Just the names of the dishes are enough to drool! They are must have winter foods! Spicy mustard greens gravy with cornmeal flatbread or roti is staple meal of Punjab especially the farmer's homes relish this as the greens are straight from the fields and corn meal rotis give the much needed warmth in winter months. The green mustard gravy tastes too good with this roti. Enjoy this mouthwatering combo! I present my version.

Ingredients

  1. For the saag:
  2. 1 cupSarso/ mustard greens(washed and chopped)
  3. 2 cupsspinach (washed and chopped)
  4. 2 tablespoonsMustard oil / sunflower oil/ ghee
  5. 1 tspCumin seeds
  6. 1 tspMustard seeds
  7. 1/4 tspHing
  8. 1/2 cupChopped onions
  9. 1 cupChopped red tomatoes
  10. 1 tspChopped ginger
  11. 1 tspChopped garlic
  12. 2-3Chopped green chillies
  13. 1/2 tspTurmeric powder
  14. 1 tspChilli powder
  15. 1.5 tspCoriander powder
  16. 1 tspGaram masala
  17. 1 tspSaunf/ fennel powder
  18. 1 tablespoonMakke ka atta / corn meal
  19. 1 tablespoonButter
  20. to taste Salt
  21. as neededHot Water
  22. For the makki ki roti
  23. 2 cupsMakki ka atta or corn meal #cornmeal
  24. to taste Salt
  25. 1/4 tspTurmeric powder for colour
  26. as required Oil for greasing
  27. as required Warm water to knead the dough

Cooking Instructions

    First, heat an iron kadhai and add 1 tablespoon oil. When it heats up, add the mustard and cumin seeds and let them pop up.

    Add hing and onions and saute well for 1 minute. Then add chillies, ginger and garlic and saute till aromatic. Then add tomatoes and cook till soft.

    Then on high heat, add the greens and stir fry them till they release water.

    Add all the spices and mix. Add a little water and cook for 2 minutes.

    Then mix makki k atta in a little warm water and add this to the vegetables. Add salt, garam masala and mix well.

    Then cook till the subji is really well mixed. Cool and give a little pulse grind in mixer for coarse but uniform texture. Sarso ka saag is ready.

    To make the Makki di roti, knead the dough with given ingredients. Let it set for 5 minutes.

    Then heat a griddle. Make ball sized portions from dough and either roll out into small round thick rotis on wooden or directly place the dough ball on griddle and press into rotis.

    Roast on both sides till crisp and golden brown. Apply butter on top.

    Serve the combo of makki ki roti with sarso ka saag with more butter on top alongside some salad of tomatoes, onions, radish and enjoy!
