Ingredients

  1. For makki ki roti
  2. 1 cupMaize flour
  3. 1/4 th cup wheat flour
  4. 2 tablespoonkasuri methi
  5. 1/2 tspsalt
  6. Ghee for basting
  7. For sarso da saag
  8. 1 bunchMustard leaves
  9. 1 bunchSpinach
  10. 1 bunchFenugreek leaves (methi)
  11. 2roughly chopped onion
  12. 1roughly chopped tomato
  13. 1 inchGinger chopped
  14. 4-5Garlic pods chopped
  15. 1-2green chillies chopped
  16. 1/2 tspred chilli powder
  17. 1 pinchAsafoetida or hing
  18. to tasteSalt
  19. 2 tspcornflour
  20. 2-3 cupswater
  21. For tempering
  22. 2 tbspGhee or oil
  23. 2-3whole dry red chilli
  24. 1onion chopped
  25. For Sweet Lassi
  26. 1 cupyogurt
  27. 1 cupMilk
  28. 1/2 tspcardamom powder
  29. 2 tablespoonsugar
  30. Somecrushed mix nuts
  31. As neededIce cubes (optional)

Steps

  1. 1

    Clean, wash and chop the green leaves.

  2. 2

    In a big saucepan add all the ingredients mentioned under sarso da saag except cornflour.

  3. 3

    Cover and cook till everything becomes mashy. Stir or whisk occasionally.

  4. 4

    Take a mixer jar and blend the mixture along with cornflour to a homogeneous thin paste.

  5. 5

    Transfer the paste into a pan and bring to boil.

  6. 6

    Simmer for 10-15 minutes.

  7. 7

    In another pan heat ghee or oil.

  8. 8

    Temper whole red chilli.

  9. 9

    Add chopped onion and saute till light golden brown.

  10. 10

    Pour the prepared saag.

  11. 11

    Adjust seasoning and cook for more 2-3 minutes and remove from heat.

    Sarso da saag is ready.

  13. 13

    Now for the Makki ki roti take maize flour, wheat flour,crushed kasuri methi and salt in a mixing bowl.

    Mix well and knead to make a soft dough using water.

  15. 15

    Cover the dough and rest for 20-20 minutes.

  16. 16

    Take small lime size portion of the dough and roll to make small roti.

  17. 17

    Be careful to roll the dough balls as they tend to break. Use oil to roll without breaking.

    Roast the roti in medium heat. Bast with ghee time to time.

  19. 19

    Roast for longer time than regular roti made with wheat flour as maize flour takes longer time to cook.

    Serve them hot with prepared sarso da saag. Top makki ki roti with some butter.

    Top sarso da saag with some raw onion and a dollop of butter/ cream/yoghurt.

    Also serve sweet Lassi as drink.

    For sweet lassi take 1 cup of yoghurt in a jar.

  24. 24

    Beat the yoghurt nicely.

  25. 25

    Add one cup of milk and sugar.

  26. 26

    Now whisk the mixture with a lassi maker or with a hand blender till forms a good forth on the top.

    Add cardamom powder and mix.

  28. 28

    Pour in a tall glass. Add ice cubes if needed.

  29. 29

    Garnish with some chopped nuts and cardamom powder. Serve with Makki ki roti and Sarso da saag.
