Baking A Better Brownie

When I don't have time to make a brownie from scratch, but I want a brownie mix to taste like it's homemade I use the recipe that follows. Although I specify Ghirardelli Brownie Mix you can use a mix that you like better. Just make the following changes. 1. Substitute an equal amount of melted butter at room temperature for the vegetable oil. 2. Toast the walnuts in advance. 3. Add 1/2 teaspoon instant expresso granules. 4. Add 1/2 cup milk chocolate chips. And most importantly, 5. Don't overbake!!

Ingredients

1 hour
Makes 25 pieces
  1. 1/4 cupwater
  2. 1egg
  3. 1/2 cupmelted butter, cooled to room temperature
  4. 1/2 teaspooninstant Expresso granules
  5. 1 (18 ounce)box Ghirardelli Double Chocolate Brownie mix
  6. 1/2 cupcoarsely chopped walnuts, toasted
  7. 1/2 cupmilk chocolate chips
  8. Baking spray

Cooking Instructions

    Spray the bottom of a 9" square baking pan with baking spray.

    In a large mixing bowl, whisk together water, egg, melted butter and instant coffee granules.

    Add in brownie mix and stir together until batter is completely wet.

  4. 4

    Gently stir in chopped walnuts and chocolate chips.

  5. 5

    Pour into 9" baking pan and bake for approximately 40-45 minutes. (Check it at 40 minutes).

    Cool on rack until brownies come to room temperature. Cut into 25 squares (They will be very rich!)

    NOTE: How to toast walnuts. Heat oven to 300 degrees. Coarsely chop walnuts and put in a single layer on a baking pan. Bake for 4-5 minutes. Remove the nuts from the oven and pour them onto a plate (paper plate is good) so that they don't continue to bake in the hot pan. Allow to cool thoroughly before using.

I am a retired school library media specialist living in southern Indiana. I spent a number of years working in schools around the world and have lived in Germany, Turkey, Saudi Arabia, and Japan. My last creation based on a book was a “Waves of the Danube” cake which was mentioned in "People of the Book" by Geraldine Brooks. It was absolutely decadent and delicious. I have always been in love with cooking and pie baking comes easy to me. I find that baking soothes me in times of stress. The first time I bake something I always follow the recipe exactly to see how it turns out. Afterwards, I will analyze it and make changes if I feel that the recipe could use some tweaking before I make it again. My cooking skills come from my Polish American family roots in Detroit, Michigan and its suburbs.
